Mussels Marinara
Mussels
- 1 pound fresh mussels, washed and debarred
- 2 tbsp garlic butter
- 1 cup white wine
- Sea salt & pepper
Marinara sauce
- 2lbs Fresh vine ripe Tomatoes
- ½ lb Red Onion
- 3 Fresh Jalapeno Peppers
- 1/2oz Fresh Cilantro
- 1 bunch Green Onion
- 1 lb Red Pepper
- Salt & Pepper
- 1tbsp Lime Juice
For the Marinara sauce
- Very fine dice all vegetables
- Fine chop cilantro
- Mix all vegetables and herbs together and season with salt, sugar, pepper, and lime juice to taste
- Put all ingredients in a small pot and heat through till the tomatoes start to wilt( this should only be about 20 mins- 30 mins med heat)
For the Mussels
- Heat heavy skillet on high till its smoking hot
- Put in a bowl the mussels, wine and garlic butter
- When skillet is hot, dump the contents of the bowl in and season with salt & pepper
- Cover skillet with a pot lid and steam for approx 3 mins
- Take off the lid, add approx 1 cup of sauce and stir, return lid
- Cook for another 2 mins and your done
Serve in large deep platter, putting the Mussels down first with a slotted spoon and then pour sauce over top, serve with warm French baguette.
