CHEF JAMES WALT

One of the country’s leading chefs and an early pioneer of farm-to-table dining, James Walt’s seasonally focused menus have always celebrated locally sourced ingredients. After graduating from Stratford Chefs School, he cooked at several of British Columbia’s top restaurants, including a four-year tenure at Sooke Harbour House. James was also Executive Chef to the Canadian Embassy in Rome. After serving as opening chef at Vancouver’s Blue Water Café, he made his home at – and a dining landmark of – Whistler’s Araxi. While James continues to oversee the kitchens of Araxi, The Cellar by Araxi and Bar Oso, in late 2017, he also deepened his longtime love for contemporary Italian cuisine, as executive chef for an updated take on Whistler’s beloved Italian restaurant, Il Caminetto.
