When we talk about “Nova Scotia Crafted,” it’s not something we’ve layered onto the experience—it’s where everything starts.

It’s a commitment to this place. To the land, the sea, and the people behind it. Our goal is simple: create something you can only experience here.

You see it in something as familiar as our Fox Harb’r Old Fashioned. Caldera Hurricane 5 whiskey, organic honey sourced locally, a bright expression of lemon, and a touch of bee pollen. It’s clean, balanced, and intentional. A classic, but grounded in Nova Scotia.

The oysters tell an even deeper story.

Ours come from Malagash Bay, from the Purdy family—farmers who have been working those waters since 1867. Long before Canada was even formed, their family was harvesting oysters from that shoreline. Today, Charles and Nancy Purdy continue that work through Bay Enterprises, carrying forward something built over generations.

What makes these oysters special is how they’re grown. They rest directly on the ocean floor, shaped by the tides and the natural nutrients of the seabed. They’re constantly filtering the water around them, taking in everything the environment offers. The result is something you can actually taste—briny, slightly sweet, with real depth.

That same mindset carries into the kitchen.

Whether it’s halibut, lobster, or what’s coming out of the ground nearby, the goal is not to overwork it. It’s to respect it. Keep it clean. Let the ingredient speak. Elevated, but never forced.
